Created from fermented soya beans, miso soup offers a great array of essential amino acids, vitamins and minerals.
Health benefits aside, it's also a great entrée for dinner parties or a tasty breakfast – just ask the Japanese!
Ingredients
- 4 cups vegetable stock
- 1/2 block of tofu
- 3 tbsp miso paste
- 1/4 cup chopped green onion
Method
Place vegetable stock in a pan and bring to the boil.
Cut tofu into small cubes and add to the soup.
Scoop some soup stock from the pan and dissolve miso paste in it.
Return to the pan.
Remove from the heat and add chopped green onion.
Tip: remember not to boil the soup after you have added the miso.
